Ingredients
200g dried dates, pitted (individual, not block)
80g desiccated coconut
50 g raw almonds
50g rolled oats
35g flax seeds
50g sunflower seeds
40g chia seeds
2 T raw cacao powder
½ tsp ground cinnamon
1 tsp ground ginger
4 T fresh storebought beetroot juice
1 T honey
1 T organic virgin coconut oil
Roll in
80g extra desiccated coconut
1. Place all the ingredients together in a food processor and process until well blended. Add the beet juice, honey, coconut oil and blend again until the mixture comes together.
2. Scoop with a 5ml spoon and shape into 3 cm balls with damp hands, roll half of the balls in desiccated coconut and leave the rest plain.
3. Serve or store in a fridge until ready to serve.
