1 1/4 Cups of Sugar
1/2 Cup Maple Syrup
1 Tbsp Baking Soda
Combine the maple syrup and sugar with 1/4 cup cold water in a medium heavy saucepan. Set over a medium heat and stir until the sugar dissolves. Let the mixture come to a boil and cook until it becomes 300 degrees and is dark in colour. (This should take 5-7 minutes).
When mixture reaches 300 degrees quickly remove pan from heat and add the tablespoon of baking powder while whisking. Pour the mixture onto a baking tray and let it cool completly in a cool and dry place.
Once the maplecomb has cooled down, break the solid maplecomb slab in pieces and dip them in good quality dark chocolate with a sprinkle of your favorite nuts.
